Spaghetti and Meatballs

We see and taste a lot of delicious dishes from all over the world.  We can get recipes online easily.  

I try to cook something new and of course I enjoy new dishes.  But even I enjoy new dishes and want to learn more new stuff, I often go back to very simple dishes without any fancy ingredients.

“Spagetti and Meatballs” is one of those simple dishes.  It’s simple that’s why it’s very popular without being left behind.  I am writing this while thinking about my mother’s tomato sauce spaghetti…

[ingredients for marinara sauce]
canned tomato (28oz) 2
garlic cloves 2 (minced)
onion (medium size, chopped) 1
red pepper 2 (crushed)

[how to do it]
Heat the olive (3 Tbs) in the pan over medium heat.  Stir fry the garlic lightly (don’t burn) and add chopped onion.  Cook until it gets soft and golden.  Add crushed red pepper and stir to release the flavor.  And pour the tomatoes with the juice into the pan. Bring to boil.  Add salt to season.  Stir frequently and cook it for about 30 min.

Kuromame(Black Bean) Diet

My mother sometimes gets diet information and calls me from Japan.  It was “olive oil diet” one time.  And it was “banana diet” some other time.

This time, as you see in the title, it is “kuromame (black bean) diet”.  Just eat kuromames(70 grams) everyday.  That’s all.  No need to skip any meals.

It is usually said food which has black color (for example, black sesame, seaweed and etc) has health benefits.  Black beans help smooth blood circulation, control body fat and high blood pressure.  And girls!  Black beans are good for our skin too.  So I’ve just started eating them.  I hope they help my fat go away and also my skin get better.

Nectarine Mousse

It’s not that easy to use up all the vegetable and fruits before they get old.  Sometimes it’s because they are in the back of the fridge and can’t be seen, sometimes we just forget… I feel terrible when I have to put them in the garbage bag.  So I try not to waste, meaning cook/bake things.

Recently my husband said “I’m getting chubby.”  Oh-oh…I knew it!!  I am sorry, my husband.  But I had to use nectarines and cream cheese which I found in the fridge this time.  So I made nectarine mousse.  Left-overs turned into dessert!!  It’s very light & smooth texture.  And not that much sugar as usual.  Does it help?

nectarines 2
cream cheese 115g(soften)
yogurt 150g
sugar 15g
lemon juice 1 Tbs
gelatin 3g
water 15ml(for gelatin)

[how to do it]

  1. dissolve gelatin by pouring water and set aside.
  2. put sugar in the lemon juice, so that sugar melt in it. add it to yogurt.
  3. put small-cut nectarines in the food processor to puree. add yogurt and mix well.
  4. make cream cheese smooth by whisking. add nectarine yogurt mixture into it. mix well.
  5. microwave the gelatin for 5 – 10 seconds (Don’t make it hot). add the liquid gelatin into #4 and mix.
  6. pour the mixture in the small glass cups or cocottes and store in the fridge for a few hours.

Nectarine Mousse



ネクタリン 2個
クリームチーズ 115g(冷蔵庫から出して柔らかくしておく。またはレンジに約10秒かけて柔らかくする)
ヨーグルト 150g(水切りはしない)
砂糖 15g
レモン汁 大さじ1
粉ゼラチン 3g
水 15ml(ゼラチン用)


  1. 粉ゼラチンに水を加えふやかしておく。
  2. レモン汁に砂糖を入れて溶かし、ヨーグルトに加え混ぜておく。
  3. フードプロセッサーにネクタリンを小さく切って入れ、ピューレ状にする。続けてヨーグルトを入れしっかり混ぜる。
  4. 柔らかくしておいたクリームチーズを泡立て器でクリーム状になるまで混ぜ、3と混ぜ合わせる。
  5. ふやかしたゼラチンを5〜10秒レンジにかけ(沸騰させないよう注意)液状にしてから4に入れて混ぜる。
  6. 容器に入れて冷蔵庫で2〜3時間冷やす。

Banana Cake

Bananas are not that special fruits.  We can find anywhere and they are not expensive, not fancy fruits at all.  But the taste makes me feel so good!  Hey, it means bananas are special for me!?

I baked very simple cake with my special bananas!  

Banana Cake

banana     1 1/2
lemon juice     3 tsp
butter     150 g (soften at room temperature)
egg     3 (room temperature and beaten)
flour     195 g (sifted with baking powder)
baking powder     1.5 tsp
sugar     130 g
vanilla extract     1 tsp

[how to do it]
pre-heat oven to 338 °F.

  1. mash bananas with the back of fork. sprinkle the lemon juice and set aside.
  2. whisk butter well and add 1/3 sugar. whisk very well again. repeat (2 more times). the mixture gets heavy and creamy.
  3. add eggs little by little and mix well.
  4. add mashed bananas and vanilla extract into the butter/egg mixture.
  5. add 1/2 flour(w/baking powder) and mix. add the rest of flour and mix again.
  6. pour the mixture into the cake pan and make surface flat. place the pan in the oven(338°F) and bake for about 25 min and reduce the oven temperature to 320°F and bake for about 25 – 30 min. (bake time will be slightly different. it’s depending on the ovens.)

Kale Fried Rice

I think we started buying kale a few months ago.  Before that, even I knew kale was nutritious vegetable and was wondering how to eat, never bought it.  One day my husband said “Let’s buy kale today.”  It was very unusual for him.  He heard some good things about kale from somebody.

For me kale was a ingredient for juice, but we didn’t have a juicer back then.  I thought I could make salad with it instead of using salad green.  That was not my favorite.  The leaf was too rough to eat as salad for me.  Next try…soup.  Cooked kale in the hot water and made puree and cooked kale potage soup.  It was sooooo good.  I loved that.

This is one of my favorite kale dishes, kale fried rice.

Kale Fried Rice

Simply made fried rice with kale, mushrooms, garlic and pork.  Season with salt, pepper and just a little bit of soy sauce.  Personally I like short grain rice, but I recommend long grain rice like basmati rice or jasmine rice for this fried rice.
